Caciocavallo translates to “cheese on horseback”. It takes its name from the manner in which the cheese was traditionally tied together on one rope and dangled over a wooden board to drain and age and looked a bit like saddle bags.
Caciocavallo is an aged stretched curd cheese. It can be used somewhat like parmesan and is a fabulous fine grating cheese to top pasta, excellent on a cheese board and a strong pizza cheese to add flavour to meaty pizzas. It pairs well with lamb, mushrooms and venison or other flavourful foods. Contains Lipase and is our only non-vegetarian cheese.
